For the past year my husband’s best friend (who we like to refer to as German #2) has been asking me to make him carrot cake. For the past year, I’ve been saying “I will, I will”.

Being the cake hater that I am, I put it off as long as I possibly could. After a year of nagging, I finally gave in. Enough already.

I skimmed through a couple books on my book shelf and grabbed “The 100 Best Vegan Baking Recipes: Amazing Cookies, Cakes, Muffins, Pies, Brownies and Breads” by Kris Holechek.

I have to admit, I was skeptical. Not being a huge cake fan let alone carrot cake, I had my doubts. 

Holy hell was I wrong. This cake came out tasting AMAZING! 

I highly recommend buying the book just for this recipe alone. There were a few other things in there that caught my attention as well though. Vegan croissants anyone?


Go buy the book. Bake it, eat it and thank me later.
